Providing a variety of training aids (posters, illustrations, practical exercises, technical fact sheets), this resource tool can be used for different audiences: streetfoods sellers and consumers, employees of NGOs
and other support structures active in this sector, official inspectors, and technicians specialized in food technology and nutrition etc.This manual expands on the Codex Alimentarius guidelines, in particular the General Principles of Food Hygiene, in the specific context to the informal street food sector, as well as the regional guidelines for the implementation of control measures to street food in Africa.The manual is currently available in French, and the English version will be published at the very beginning of 2009. |
